Nutritious and moorish energy balls ~Leslie Gerrish



200g pitted ready to eat dates

75g dried cranberries

30g ground almonds

30g sunflower seeds

Zest of 1 orange

Approx 3 tbsp maple syrup


Blend all these ingredients in a food blender until finely chopped and all the ingredients combine into a dough like ball. If not combining then simply add more maple syrup. Shape into small balls using palm of hands and toss into milled golden flaxseed (used one from Waitrose - cranberry, blueberry & lingonberry mix). Makes up to 40. Will last in an airtight container for up to 4 weeks and more!!

Other flavours – swap cranberries for dried mango, banana or pineapple. Swap sunflower seeds for pencans, hazelnuts or pumpkin seeds. Swap coating for desiccated coconut or chocolate whey powder. Swap maple syrup for honey, golden syrup or vanilla essence.

Each energy ball provides 40 calories/7g carbs
